The oat groats are done when they are soft but still have a chewy texture. If you like them a little chewier you can simmer for 45 minutes. If you’d like to make them as soft as possible, simmer for up to 60 mins.
If you choose to simmer them for a long time, all of the water may get absorbed. If this happens, the grains will start burning to the bottom of your sauce pot, so you’ll want to add another ½ cup of extra water or so.

Once grains have reached desired chewiness, drain any extra water.
