Sausage and Mushroom Rice

Sausage, mushrooms and rice combine with savory seasonings-garlic, thyme and oregano-to create an easy 30 minute meal and cozy dinner.


  • 1 Onion, chopped
  • 16 oz Mushrooms, sliced white or baby bella
  • 16 oz pork sausage roll regular flavor
  • 2 cups pearl (sushi) rice white rice is ok too
  • 2 cups low sodium chicken broth
  • 1 teaspoon garlic powder
  • 1 tsp dried oregano
  • 1 teaspoon dried thyme leaves
  • salt and pepper to taste


  • Start by cooking the rice using your favorite method of cooking rice. (See notes)
  • Dice the onion.
  • Crumble sausage in a non-stick skillet and cook over medium high heat. When the sausage is brown, add in diced onions and mushrooms. Continue to saute until mushrooms and onions are soft.
  • Add the garlic, thyme and oregano to the skillet and saute for 1 more minute. Keep warm on low heat until rice is completely cooked.
  • In a large bowl, or in the instant pot if using, mix the sausage and vegetables together with the rice. Season with salt and pepper to taste.


Stove: Combine 2 cups of chicken broth and 2 cups of rice in a pot of the stove. Cover. Bring contents to a boil and then simmer on low heat until water is absorbed-about 15 minutes. Remove pot from heat, but don't remove the lid for an additional 10 mins.
Instant pot: Add 2 cups of chicken broth and 2 cups of pearl rice into the instant pot. Add lid, making sure it has properly sealed. Cook on high pressure for 5 minutes. Natural pressure release until pin drops (max 18 mins).
Rice cooker: Add 2 cups of chicken broth and 2 cups of pearl rice to a rice cooker and turn the device on.
